When shopping for carrots, opt for uniformly sized carrots to ensure even cooking time. You can use whole mature carrots, petite carrots or bite-sized baby-cut carrots. Experiment with different colors like orange, yellow, red and purple for a rainbow medley.

 
 
 

We make our sticky, sweet glaze from only a handful of ingredients: butter, honey, dried rosemary, garlic powder, salt, and pepper. We love the combo of these simple household ingredients, but feel free to experiment! Swap out the garlic powder for minced garlic if you prefer, switch up your herbs, or add in some ginger or cinnamon to play up the carrots' natural sweetness.

 

Ingredients:

  • 1/4 c. butter

  • 2 tbsp. Avocado honey

  • 1/2 tsp. dried rosemary

  • 1/2 tsp. garlic powder

  • Kosher salt

  • Freshly ground black pepper

  • 15 carrots (2 lbs.), peeled and halved lengthwise

  • Fresh thyme, for garnish (optional)

 

Directions:

First, preheat your oven to 400°F (Around 200C). In a small saucepan over low heat, melt the butter. Then, stir in the Avocado honey, rosemary, and garlic powder. Season with a pinch of salt and pepper.

Next, arrange the peeled and halved carrots on a large baking sheet. Drizzle the melted honey glaze over the carrots and toss to coat evenly.

Roast the carrots in the preheated oven until caramelized and glazed, about 35-40 minutes.
